Food Waste Recycling Program Implementation
Client: Seattle Mariners

Safeco Field is one of the first ballparks in the Country to get serious about going green. Cascadia provided strategic guidance to the Seattle Mariners in designing, implementing and evaluating a food waste recycling program throughout Safeco Field food service operations, including concessions, restaurants, and catering facilities.  We collaborated with local waste collectors and the regional compost facility to ensure the long-term sustainability of this program.  The Mariners expect to save between 20 and 30% on their waste bills and recycle 1,000+ tons of food scraps each year.  What’s next?  The Mariners are planning to compost food scraps left behind by fans in the stadium and their catering company is exploring compostable drinking cups and other food service items to further increase composting happening at the ball field.

Conducting an assessment of our environmental impact allowed us to more clearly define and share our progress with guests and employees, as well as to create benchmarks and strategies for the future. Working with Cascadia Consulting on our hotel footprint was an incredibly successful experience and we are planning to continue our work with them to explore the impact of additional areas of our operation.
